Harvested by humankind for thousands of years, Milk is a highly nourishing food, with numerous nutrients. Be it from cows, buffaloes, or goats, raw fresh milk is highly perishable, being a great growth media for the microorganisms that cause spoilage. To prevent its quality from deteriorating, a crucial part is the cooling and storage of the milk.

The cooling of milk is essential to maintain its quality, prevent bacterial growth and ensure high quality milk for processing. Fresh warm milk, when extracted, is at around 37°C. If the milk continues to remain at room temperature after extraction, baterial growth will affect the quality of the milk. It is thus imperative to cool the milk to 4°C, within a couple of hours after milking. This cooling requires considerable use of energy, suitable refrigeration equipment and insulated storage tanks designed specifically for milk. There are several ways for satisfying these requirements and these should be examined, bearing in mind the need to minimize operating costs related to cooling.
